Natural
Coffee cherries grow in vast plantations, bathed in the blessings of the sun. Harvesting these fruits and drying them as they are is the most traditional method, known as "Natural." This process, where the sweetness of the fruit pulp slowly permeates the beans, results in a rich sweetness reminiscent of berries and jam, and a deep, wine-like body. Washed
On the other hand, "Washed" offers an astonishingly clean and refined impression. This method involves carefully removing the pulp, washing it with clear water, and then drying it, directly bringing out the inherent potential of the beans. Honey Process
And in recent years, what has captivated us with its depth is the "Honey Process." This method, where the pulp is removed but the mucilage (sticky layer) around the bean is intentionally left to dry, is truly a "best of both worlds" approach, combining the good aspects of both Natural and Washed. Depending on the amount of mucilage left, it changes in appearance from white, yellow, red, to black, creating an exquisite balance of honey-like melting sweetness and delicate acidity. Furthermore, innovative attempts such as "anaerobic" (anaerobic fermentation), which ferments by blocking oxygen, are pushing the boundaries of coffee flavor.
