The cool environment of high altitudes allows the coffee cherries to slowly accumulate sugars. This "slowness" is the magic that creates complex and rich flavors in the future. Also critical are ideal soil and sunlight. Without these, the beans won't grow strong enough to withstand the heat of roasting.
Farmers: The "artisan's eye" of farmers, never missing the moment of ripeness.
When coffee cherries turn deep red or yellow, it's the earth's signal that they are "ready." Coffee farmers carefully assess each and every cherry. Even one unripe bean mixed in can result in a bitter taste. After harvesting, the beans are meticulously processed using methods that best bring out their individual character, such as natural dry processing or washed wet processing.
Roasters: The roaster who breathes life into the beans.
After processing, the beans are still dormant. It is the job of the roaster to apply heat and breathe life into them. A dance inside the drum, beginning at around 150 degrees Celsius. Hundreds of chemical reactions occur there, releasing caramel-like sweetness, chocolate-like richness, and fruity aromas.
